Jane's Tomato Basil Soup

I asked my friend, Abi for permission to share this AMAZING soup! When I say amazing, I mean it! Anytime I've made it for others, I've been asked for the recipe. Even my pickiest eaters enjoy this. It's filled with warmth and completely dunk-able. I always make sure to keep some cans of stewed tomatoes on hand so that I can have a quick meal. Did I mention that you can make it in 30 minutes?! My only changes to this recipe is to make it gluten free by using cornstarch instead of flour, and if I don't have fresh basil, I'll use dried basil



Recipe:

1/4 cup butter

1/4 cup flour(gluten free, use cornstarch or other gluten free flour)

1 cup whole milk

1 1/4 cups cream

1 teaspoon salt

1 teaspoon pepper

2 teaspoons Jane's Krazy Mixed-Up Salt, or herbed salt

5- 14 ounce cans flavored stewed tomatoes(use a variety)

1/4 cup fresh basil, finely chopped(3-4 TBS dried basil is you don't have fresh)

2 teaspoons sugar

Dash of Tabasco sauce, optional

  1. Make a roux by melting butter in a large soup pan over medium heat, then whisk in flour and cook for one minute, stirring constantly.

  2. Slowly whisk in milk and cream. Add salt, pepper and herbs salt. Cook until it comes to a boil and thickens.

  3. Pulse stewed tomatoes in a blender.

  4. Mix tomatoes into rue. Add basil, sugar and Tabasco. Season to taste with salt and pepper.

Serves 8-10 people
